It is hard to believe that Karen's Garden will be two years old this Spring. The garden will be a bit different this year. It will hopefully yield a bounty of fruits and vegetables that will be present in both USM's kitchens in the fall.
Last year tomatoes were the big crop in the garden. We were able to get a couple of green peppers and a few carrots as well. We harvested over 200 pounds of tomatoes from the garden last year - quite a feat and beyond our expectations. This year, however may be a bit different. We hope to begin planting vegetables and fruits in flats in the green house before we plant them in the garden. We will plant the seeds in a mixture of soil created by vermicomposting this winter and sifted coconut hulls. This will give the seedings a head start before planting in the spring. Here are some of the vegetables we will be planting: radishes, cucumbers, beans, lettuces, carrots, beets, sunflowers, and more. THe hope is to create a highly productive garden that will be biointensive. The garden will be redesigned before the spring turnover (early May). The redesign will include a new mapping of the garden and where things will be planted. We hope to do some companion planting as well. It will be an interesting and ambitious spring and summer!
